Pancake success!

I wanted pancakes this morning, so I modified my favorite pancake recipe to be vegan. Turned out delicious! My kids even asked for seconds!

Vegan pancake recipe

1 C whole wheat flour
3/4 C unsweetened vanilla almond milk
1/4-1/2 C mashed tofu
3 tsp baking powder
2 tbsp olive oil
Dash of salt
2 tbsp brown sugar
1 banana

  1. In case you don't have tofu and extra sugar on hand, I always do:
    -- Dairy free pancake mix (I'm a sucker for easy store bought stuff! Bisquick is usually this, if you read the back label. Our HEB also has a cheap-o version that is milk-free)
    -- 1 banana or cup of applesauce in place of every egg the mix calls for
    -- soy milk in place of milk milk
    -- and I can't resist chopping up strawberries or bananas to make them fruit pancakes :)

  2. Luke, they were seriously delicious. I ate the left overs for breakfast this morning, slathered with Earth Balance. Sad news, though: my gallon of VT maple syrup is gone. :( Time for Mom and Dad to make another trip out East.
